Happy five hours from weekend everyone! Things are kind of weird for me today as it’s the first day not working at my (previous) job. My 3 weeks are up! I start my new job on the 27th but I’m feeling very “what do I do with myself?!” currently. I’ve made plans to meet with friends a few days next week but besides that I’ll have lots of time to… relax? Har-har. Really though, I’m one of those people who likes to stay busy so this will be mighty interesting.
So far this morning I woke up at the crack of dawn (after some snuggles with my puppy) and went for a morning bike ride accompanied by some country music and took in the scenery. That was truly beautiful and I could wake up to this every day! Next it’s time for breakfast, shower, and getting ready to meet with friends. Happy Friday Y’all!

Velveeta cheeseburger cups that Elliott and I made last night. They were beyond delicious! Normally we eat pretty healthy so this was a delicious treat (he said he saw a picture of them online and “all bets were off” and he was right! They were sooo good!
1 Pound Ground beef
1/2 Cup Ketchup
2 Tbsp Brown Sugar
1 Tbsp Prepared Mustard
1 1/2 Tsp Worcestershire sauce
1 Tube (12 ounces) refrigerated buttermilk biscuits
1/2 Cup cubed Velveeta cheese.
- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, brown sugar, mustard and Worcestershire sauce. Remove from the heat; set aside.
- Press each biscuit onto the bottom and up the sides of a greased muffin cup. Spoon beef mixture into cups; top with cheese cubes. Bake at 400° for 14-16 minutes or until golden brown.
Freeze option: Freeze cooled pastries in a freezer container, separating layers with waxed paper. To use, thaw pastries in the refrigerator for 8 hours. Reheat on a baking sheet in a preheated 375° oven until heated through. Yield: 5 servings.
